Outlook questions

muck_a_luck1. I don't like the way Outlook hides actual e-mail addresses under cover names. So, for instance, instead of showing my e-mail baranduin (at) gmail (dot) com, it instead just shows CK, and I have to right click and pull up outlook properties to find out the underlying e-mail. Anyway to change an option that will stop that, so that I can see the actual e-mail address?
2. Eudora used to remember basically every e-mail address it ever processed. Outlook remembers at random. I see that I can right click an address and add it to contacts. Is there any way to just tell Outlook to hoover up every e-mail address that passes through automatically without special instructions?
