Here's something that bugs me.

People who don't say "okie dokie" or "okie doke", the accepted forms of this expression of agreement and acknowledgement, but rather say "okie do."

I have never been able to figure out why this bugs me so much.

Then today, I realized.

Okie do sort of sounds like it ought to *be* something. Some form of martial art, possibly. Like Aikido's hick cousin, or something.

Is that pronounced like okie doe or okie do (as in ado)? Both are annoying but the first would be maddening.

Okie doe. Rhymes with Aikido. And I have known more than one person who did it. It would drive me up the wall. I don't know if somebody used it recently and that is why I was thinking of it.

And "okie dokie" is better somehow?

Yes. I offer no rational explanation (or defense) as to why, though. Probably just because I'm used to it.
