It keeps track of stuff for you. Like if you see something on a website that interests you, you can highlight it, copy it, paste it into evernote, and it keeps it and makes a note of the source, so you can go back to the site later if you want. You can put anything into the note stream.
Personally, I have not yet found it to be thrillingly useful for the work I do. Mostly have been dropping to do items from the boss into it. But for those of you who surf more than I do, I could imagine it being very useful...
