Six Week Muffins

A “family recipe” that may have come from the back of an All Bran box ages ago. For Jules, aka
azramoon.
I love these muffins. Though sometimes they can be a little bitter from the soda. But they are easy and hot and yum and I just load them up with lots of salty butter... Mmmmmmmmmm.
Also, I am possibly a weirdo, but I love the way this smells when it’s being mixed up. The sweet smell of the dissolved bran and the sour smell of the buttermilk together just give me a happy feeling in my whole self.
Six Week Muffins
6 c. All Bran (1 pkg)
1 c Crisco
4 beaten eggs
5 c plain flour
2 c boiling water
3 c sugar
1 qt buttermilk
5 t soda
2 t salt
Put 2 cups bran in largest bowl. Pour boiling water over. Cereal will almost completely dissolve. Mix in Crisco so that it melts. Let stand.
In another bowl, mix the rest of the bran, beaten eggs and buttermilk.
I a third bowl, sift together flour, salt, soda and sugar. Combine all ingredients together.
Store in a sealed container in your refrigerator for up to six weeks.
When you are ready to bake, scoop batter into prepared muffin cups and bake at 400 degrees for 20 minutes.
They really can last for 6 weeks. Though they rarely do.
Urgh. Now I want some. And so not diet-friendly. Which then makes me think of Gondorian Muffins. Could just have major muffin fest this weekend. If my damn oven were working. Stupid landlord. No apple or pumpkin pie, either. *grumbles off*
