She says she ate it at Kindercare, so it would have been a pretty unexciting one, I would guess.

Date: 2012-02-21 12:56 am (UTC)Your very simplest option is to buy a packet of seasoning mix and follow the directions, adding whatever seems reasonable to you, such as minced onion.
No matter what recipe I'm using, my sekrit ingredient is Heinz 57 Sauce slathered over the top before baking. Mmmmm. Now I wish I'd had meatloaf planned before I divided up my fresh bought ground beef and stuck it in the freezer because I didn't know what to make!

binder - egg is the old standby but I have used soy flour and water in a pinch
body - dried or fresh bread crumbs, panko, crumbled saltines or ritz crackers, cooked rice
flavor - what nationality are you tonight? curries, italian seasoning, southwestern seasonings, go french with thyme, go swedish with dill...
moisture - yeah, you'd think the egg, but you'd be wrong. Mushrooms finely chopped, shredded carrot or zucchini, finely chopped onion, fresh garlic, tomato paste or my white trash alternative, ketchup...whatever veg you want your family to eat but need to hide from them
on the top - the standard is heinz chili sauce but I have also used marmalade and hot sauce mixed and microwaved, red onion jelly, hot pepper jelly, bbq sauce, hoisin sauce, teriyaki sauce...you get the picture.
THE most important thing is to make sure your ingredients match each other...I know I am not talking to you here, but someone with less cooking experience may stumble upon this and thoughts of a turkey meatloaf with soy sauce, green onions, and cumin topped with chili verde kind of scares me off food!
