Lime marinade for shrimp or chicken

Citrus Marinade


2 lg cloves of garlic, minced
1/3 c olive oil

Cook garlic in oil until browned. Remove from heat. Discard garlic.

Combine with:

3 T brown sugar
2 T balsamic vinegar (I use plain vinegar)
1.5 t Dijon mustard (I do not use)
1.4 c lime or orange juice (I use lime)
1.5 t grated lemon zest (or ΒΌ t lemon extract)

Use to marinate 1.5 to 2 lbs shrimp or chicken.

I think this may work with Quorn, too. Do you have it over there? It's like a chicken substitute, comes in fillets, mince, pieces, pies etc, and is quite bland, but picks up flavours really well.

I have heard of Quorn, but never looked for it.

I would be more experimental with things like quorn, and soy products, etc, but Husband refuses to eat any of it...
